Apan Kumaon Ka Swad – Recipe book from Kumaon, Uttarakahnd is a recipe book in Hindi filled with recipes from the local region. It was made in collaboration with local women. All the recipes are vegetarian and based on seasonally available vegetables and produce such as Gehet (Kulath, a local type of bean) are fashioned into different preparations like Ras-Bhaat, Chains, Faanda and Thatwaani. All are unique recipes from the Uttrakhand area, where our headquarters, the Vrikshalaya Himalayan center is based. The recipes are highly nutritious and use staples such as millet.
We hope to be working on an English recipe book later on in the year.
